Ingredients (Serves 4)
For the Mashed Potatoes:
2 lbs Yukon Gold or russet potatoes, peeled and cubed
3–4 tbsp Benissimo Roasted Garlic Infused Oil
½ cup milk or cream (warm)
1–2 tbsp butter
1½ tbsp Benissimo Wicked Good Garlic & Chive Seasoning
Salt and black pepper to taste
For the Sausages:
4–6 pork sausages (traditional bangers, bratwurst, or your favorite sausage)
1–2 tbsp Benissimo Roasted Garlic Infused Oil
For the Onion Gravy:
1 large yellow onion, thinly sliced
1 tbsp Benissimo Roasted Garlic Infused Oil
1 tbsp butter
1 tbsp flour
1½ cups beef broth
1 tsp Dijon mustard (optional but recommended)
Salt and black pepper to taste
Instructions
1. Make the mashed potatoes: Place cubed potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 12–15 minutes, or until fork tender.
Drain the potatoes and return them to the pot. Add butter, warm milk or cream, Benissimo Roasted Garlic Oil, and Wicked Good Garlic & Chive Seasoning. Mash until smooth and creamy. Taste and adjust seasoning with salt and pepper if needed. Cover and keep warm.
2. Cook the sausages: Heat 1–2 tablespoons of Benissimo Roasted Garlic Oil in a large skillet over medium heat.
Add the sausages and cook for 10–12 minutes, turning occasionally, until browned and cooked through. The roasted garlic, rosemary, and thyme in the oil will infuse the sausages with incredible flavor while they cook.
Transfer the sausages to a plate and keep warm.
3. Make the onion gravy: In the same skillet, add butter and 1 tablespoon Benissimo Roasted Garlic Oil. Add the sliced onions and cook over medium heat for 8–10 minutes, stirring occasionally, until soft and lightly caramelized.
Sprinkle in the flour and stir for about 1 minute to form a roux. Slowly whisk in the beef broth, scraping up any browned bits from the pan. Stir in Dijon mustard if using.
Simmer for 3–5 minutes until the gravy thickens. Season with salt and pepper to taste.
4. Assemble the Benissimo n’ Mash: Spoon a generous serving of mashed potatoes onto each plate. Top with sausages and ladle warm onion gravy over everything.
