Ingredients:

1 large eggplant, sliced ¼ inch thick
1 tablespoon kosher salt
2 eggs, lightly beaten with a splash of milk
2 cups Italian breadcrumbs
2 cups flour

2 teaspoons Benissimo Traditional Italian Seasoning
1 ½ cups EVOO

Instructions:
