FOR THE PASTA

1 pound elbow macaroni (or cavatappi)
Salt for pasta water

FOR THE CHEEZE SAUCE

4 tablespoons unsalted butter
4 tablespoons all-purpose flour
3 cups whole milk (warm)
1 cup heavy cream
2 cups shredded sharp cheddar
1 cup shredded Gruyère or Monterey Jack
1 teaspoon Dijon mustard
1 teaspoon garlic powder
1½–2 tablespoons Everything Bagel Seasoning
Salt & black pepper to taste

FOR THE TOPPING

½ cup panko breadcrumbs
1 tablespoon melted butter
1 tablespoon Everything Bagel Seasoning
Optional: ¼ cup freshly grated Parmesan

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta until just shy of al dente. Drain and set aside.
  2. Make the roux: In a large saucepan, melt butter over medium heat. Whisk in flour and cook 1–2 minutes until lightly golden and smooth.
  3. Build the sauce: Slowly whisk in warm milk and cream. Continue whisking until thickened, about 4–5 minutes. Stir in Dijon, garlic powder, and Everything Bagel Seasoning. Reduce heat to low and add shredded cheeses. Stir until melted and smooth. Taste and adjust salt and pepper.
  4. Combine: Fold in cooked pasta until evenly coated.
  5. Bake: Preheat oven to 375°F. Transfer mac & cheese to a greased baking dish. Mix panko, melted butter, Everything Bagel Seasoning, and Parmesan. Sprinkle over top. Bake 18–22 minutes until bubbly and golden.
