Georgia Peach and Mozzarella Caprese Salad with Balsamic Garlic Drizzle

This twist on the classic Caprese Salad celebrates the juicy sweetness of Georgia peaches with a touch of Southern charm. All of our oils are bottled in our Atlanta, Georgia facility. Mozzarella cheese adds a luxurious creaminess, while the Balsamic Garlic oil from Benissimo elevates the flavors to a whole new level.

Ingredients:

  • 2 ripe yellow or white Georgia peaches, thinly sliced
  • 1 pint heirloom cherry tomatoes, halved
  • 1 ball (8 oz) fresh mozzarella cheese, roughly torn
  • 1/4 cup fresh basil leaves, whole or roughly torn
  • 2 cups chopped romaine lettuce
  • 2 cups fresh spinach
  • 2-3 tablespoons Benissimo Balsamic Garlic Oil 

Instructions:

  1. Assemble the Salad: In a large serving platter, layer the chopped romaine lettuce and fresh spinach first.

  2. Next Layer: Arrange the sliced peaches in a single layer over the bed of greens. Scatter the halved cherry tomatoes over the peaches.

  3. Mozzarella and Basil: Gently tear the mozzarella cheese and distribute it evenly over the salad. Scatter the fresh basil leaves around the platter, leaving some whole for a beautiful presentation.

  4. The Dressing: Drizzle the balsamic garlic oil generously over the entire salad.

  5. Finishing Touches: Finish with a final grinding of fresh black pepper or your favorite parmesan cheese (optional).

Tips:

  • For an extra touch of sweetness, drizzle the peaches with a teaspoon of honey or maple syrup before assembling the salad.
  • For a vegetarian option, simply omit the mozzarella cheese.
  • This salad is best served immediately, while the peaches are still fresh and juicy.
  • Leftovers can be stored in a covered container in the refrigerator for up to 2 hours, but the texture of the peaches will soften. Consider making a smaller batch for the freshest flavor.
