Makes about 2 ½ cups
Ingredients
2 cups whole raw almonds
1 egg white
1 tablespoon water
⅓ cup Maple Bacon Sugar
½ teaspoon kosher salt
¼ teaspoon smoked paprika
Optional
Pinch cayenne for subtle heat
Instructions
Preheat oven to 300°F. Line a baking sheet with parchment paper.
In a medium bowl, whisk together the egg white and water until frothy.
Add almonds and toss until evenly coated.
In a small bowl, combine Maple Bacon Sugar, salt, smoked paprika, and cayenne if using.
Sprinkle the sugar mixture over the almonds and stir until fully coated.
Spread almonds in a single layer on the prepared baking sheet.
Bake for 25 to 30 minutes, stirring once halfway through, until golden and fragrant.
Remove from oven and let cool completely on the baking sheet. The coating will crisp as it cools.
Break apart and store in an airtight container for up to one week.
