Ingredients
2 large sweet potatoes, peeled and cubed
2 tablespoons Organic Avocado Oil
½ teaspoon sea salt
½ teaspoon smoked paprika
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions

Preheat oven to 400°F.

Toss sweet potato cubes with Organic Avocado Oil, salt, paprika, and pepper.

Spread evenly on a parchment-lined baking sheet.

Roast for 25–30 minutes, stirring halfway through, until tender and lightly caramelized.

Sprinkle with fresh parsley before serving.
