Ingredients:

1 ¼ cups chicken broth (32 ounces)
1 cup dried lentils, sorted and rinsed
1 ½ pounds russet potatoes, cut into ¾-inch pieces
2 cups chopped onions
2 cans (14.5 ounces each) diced tomatoes, undrained
2 tablespoons Benissimo Traditional Italian Seasoning
1 teaspoon salt
¼ teaspoon crushed red pepper flakes
1 bag (5–6 ounces) fresh baby spinach leaves, chopped

Instructions:

  1. Coat a 4–5 quart slow cooker with cooking spray.

  2. In the slow cooker, combine all ingredients except spinach and Parmesan.

  3. Cover and cook on low heat for 8–10 hours.

  4. Stir in fresh baby spinach just before serving.

  5. Serve sprinkled with Parmesan cheese.
